Tonight we had it with Pork Tenderloin and a Maple Mustard Sauce. The nose is inviting with vanilla and toasted oak. The palate has a really nice mouth feel with raisins and peaches. Hot Cinnamon comes in late for nice balance and lingers. The finish lasts a long time with the red hot cinnamon candies and the dried fruits. It worked very will with the pork that was seasoned with garlic, rosemary and thyme. The Maple mustard sauce and the cinnamon danced with each other but neither ever gave way.
